Situated within Edna Valley’s perfect microclimate and geology, we commit ourselves to know each vine intimately - hand hoeing, applying compost teas, and planting cover crops to cultivate unrivaled fruit. We harvest by hand at the precise moment and sort the fruit by hand both in the vineyard and winery to maintain our commitment to use only the finest grapes. Natural yeast fermentation in select French oak barrels and wax seals on premium glass bottles allows the wine to develop quietly in its own time. Our tireless focus on low yields and extraordinary fruit means that we produce just a few hundred cases of wine each year, which is made available through our wine club. TIMBRE (pronounced TAM·ber or TIM·ber) is the “color” of music. It is what makes two voices sound different, even when singing the same song. It is why two winemakers, working with the same vineyards, make unique wine. As a terroir-driven winery, we make wines expressive of the places and times from which they came. As winemakers, we channel those sites through our experience, adding our own mark- our TIMBRE- to the resulting wines.

Founded by Joshua Klapper and Alex Katz, TIMBRE WINERY is the culmination of years of hard work, and dedication to our craft. It is winemaking expressed through the universal language of musical sound.

TIMBRE WINERY is committed to sustainable practices in its vineyard and product sourcing, as well as its production.

On a Yosemite backcountry camping trip in 2009, Josh Baker and Matt Brain discovered a common goal of creating a wine label that would showcase the hard work and responsible farming taking place at their favorite vineyards.

Baker & Brain is small-lot, minimal intervention winemaking aimed at showcasing the finest, most consciously farmed vineyards throughout California, while maintaining a minimal carbon footprint. Exceptional fruit is minimally processed to create wines that are expressive, balanced and exciting.  [post_title] => Baker & Brain [post_excerpt] => A campfire, a marmot and a flask of whiskey...These are the humble beginnings of Baker & Brain Wines. Halfway between the two main California metropolises of Los Angeles and San Francisco is Paso Robles Wine Country. Located along California's famed Central Coast, the Paso Robles winegrape growing region's climate is perfect for the production of award-winning premium wines. A long growing season of warm days and cool evenings give rise to vibrantly ripened fruit with dynamic flavor profiles that translate beautifully in your glass of Paso Robles wine.

Traversing the landscape you will find 40,000 vineyard acres, producing more than 40 winegrape varieties - from Spanish to Italian, Bordeaux to Rhône, including the area's heritage variety Zinfandel. The styles of wine are diverse in this very distinct region.

Along your journey through Paso Robles Wine Country, take time to stroll the historic downtown to shop and dine. Boutique stores, wine country cuisine, and tasting rooms fill the blocks surrounding Paso Robles' Downtown City Park. A scene right out of a Norman Rockwell painting, Paso Robles' downtown completes the picture of Paso Robles Wine Country.

Neighboring Paso Robles along the coast are the towns of San Simeon, home to Hearst Castle on the north, and the fishing village of Morro Bay to the south. In between you will find Cambria, Harmony, and Cayucos. All are within a short drive and worthy of your exploration. Much like the marine air influence to the winegrapes, the coast is a perfect complement to your Paso Robles Wine Country experience.

We invite you to discover Paso Robles Wine Country. Use the links above to learn more about Paso Robles' history, its wineries and vineyards and upcoming events. To find out more about visiting Paso Robles Wine Country, explore the touring and visitor information.

The wineries of SLO Wine Country boast an average distance of just five miles from the Pacific Ocean, resulting in prevailing marine conditions that are among the most pronounced of any wine region in California.

SLO Wine Country includes two small adjoining American Viticultural Areas—the Edna Valley and Arroyo Grande Valley—and other nearby winegrowing areas.  Each of these areas shares a unifying proximity to the ocean, as well as to each other. Collectively, these growing conditions forge a unifying wine quality that is native to SLO Coast:

Cool: The reliable cooling effect of the nearby Pacific Ocean ensures a long growing season, enabling the grapes to achieve physiological ripeness and natural balance. Cool-climate varietals such as Chardonnay and Pinot Noir excel in the heart of SLO Coast, and even the warmest areas benefit from considerable marine influence.

Consistent: The ocean proximity also exerts a moderating effect on the climate, minimizing temperature swings so that growing conditions are rarely hot or cold. The result is an extraordinarily steady growing season that fosters balanced ripening and consistent quality from vintage to vintage.

Complex: The San Luis Obispo Coast's uncommonly complex soils, which are frequently riddled with ancient sea fossils. Soil variation enables the winegrower to mix and match varietals to specific soil profiles, or to add more "colors" to the palette of a single varietal, heightening overall quality and complexity.

Sebastian's General Store has carried on through generations. Built in 1852 at the peak of the whaling industry, the Sebastian Brothers provided goods and services to whalers, fishermen, miners, and neighboring ranches.

Sebastian Brothers General Merchandise in San Simeon Bay was the significant shipping point for barrels of whale oil, cheese, butter and other commodities on the Central Coast. Old San Simeon Village was flourishing with two hotels, saloons, a blacksmith, a livery stable, a butcher, schools, a depot for a stage travel to Cambria and a telegraph line to San Luis Obispo.

In 1878, the Bay View Hotel was built; a first-class hotel with famous guests Thomas A. Edison, Winston Churchill and Calvin Coolidge, to name a few. Some remnants of the village are still visible today but by 1910, most of the village faded away. Sebastian's General Store survived and is flourishing. Sebastian's was the first post office in San Simeon until 1905 when it was moved to the pier. It was moved back in 1945, where it remains today. The Sebastian family bought the building in 1914 and operated the store for almost 100 years.

Family-owned and operated, this boutique winery began with the vision of founder Herb Filipponi whose father, Lorenzo, immigrated to America from Switzerland in the early 1900's with the dream of a better life. After purchasing and settling on this 300 acre ranch, Lorenzo started a dairy farm where Filipponi Ranch Cellars is located today.

The goal at Filipponi Ranch Cellars is to make small lots of high quality wine. The grapes are harvested by hand from some of the finest vineyards in San Luis Obispo and Santa Barbara counties and every bottle of wine is hand-crafted in the original dairy barn.

You will be delighted by the beauty of the ranch while you enjoy our hand-crafted wines. After tasting, you are welcome to use the picnic area for lunch or stay and enjoy a game of bocce ball or horseshoes under the sycamore trees. Cutruzzola Vineyards is located in a coastal valley just outside the town of Cambria on California’s Central Coast. By fortune of geology, many of our vineyard blocks contain limestone which limits yield and enhances quality.

We have two acres planted to Riesling and five acres to Pinot Noir on steep hillsides in a cool-climate site that is ideal for these varietals. Stand in the vineyard, and on most days you’ll be warmed by sunlight and cooled by ocean breezes.

The farmhouse, old dairy barn, and ranch-hand quarters date back to the late 1800s. The beautiful grounds even gained the attention of Sunset magazine.

Planted in 1998, the vineyard thrives in Cambria's unique microclimate and produces rare coastal style Pinot Noir, Chardonnay and Syrah. The wines won awards in San Francisco, Monterey, Los Angeles and Orange County.
